Tidbits from Sandra

Summer brings so many opportunities to learn, grow, and relax and it goes by so quickly.  It is fun to make new acquaintances and renew old friendships.  The sharing that goes on at the Institute and Conference makes everyone’s job a little bit easier each year.  Thanks to all who make that effort to share and in doing so, learn even more, and to those who make the effort and take the time to grow professionally.

Remember the challenge to walk to conference!  The idea was stolen from one Joni Davis issued a few years ago.  So far I’ve done 15 miles so am the equivalent of almost to the highway 83 junction.  I need to go a little further each day or I’ll be standing in Warner or Ipswich, so to speak, when the rest of you are in Aberdeen learning and laughing and listening.  Walk on!

The test scores of those who have taken and passed the ServSafe test this summer have been impressive.  Most have passed – some that did not will choose to test again and do better next time around.  Whether or not you pass, the important thing is that you apply what you learned in class to keep the food safe.

Keep us posted on new developments.  Try to implement some new things in the menu and the food service line – when it comes time for us to ask for best practices, don’t be bashful!  The food art garnishes for decorating the lunch line at Institute were outstanding.  You can view them at http://www.state.sd.us/deca/CSCF/CANS/news/garnish.htm.  JoAnne’s food-art flowers and vase were selected and used at the Falls Park Arts Festival right after certification institute.  While you probably can’t do something like this each day, it would be fun to have something like that at birthday lunch days or on special holidays.
